The uglier the cookie, the more delicious! Actually, I am not very good at making cookies pretty, so I kind of made that up.
Since I can’t have much sugar, I have found a way to make scrumptee-umptous cookies with very little sugar! So easy. I like to make only two for each person and then refrigerate the rest of the dough in a baggie. When I get the notion, I bake up a few more.
Here’s the super simple recipe…
Ugly Chocolate Chip Cookies (sugar-free)
2 sticks of butter (or 1 cup of Smart Butter)
1 1/2 cups of Coconut Sugar -Buy here
1 tsp vanilla extract
2 eggs (or egg substitute)
2 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 pkg (12 oz) Chocolate Chips (or dairy-free chips- buy here)
Preheat oven 375 degrees.
Mix the softened butter (you can put the sticks in the microwave for a few seconds), sugar, and vanilla until it feels fluffier.
Add eggs and mix well.
Put the flour, baking soda, and salt in and then fold in the chocolate chips.
Lightly grease a cookie sheet and drop the dough on- make sure you have a few inches between each or you will have a mega cookie!
Bake 10-15 minutes
Let cool a few minutes otherwise they will crumble.
I highly recommend these with some California Unsweetened Vanilla Almond Milk. My husband hates, even detests, anything that “pretends to be milk”. But, he had a bite of my cereal with this on it and fell in love. He’s been drinking this particular kind of almond milk since. But, he hates the other kinds… At least he has come over to the vegan side a wee bit. Any little change is a good change!
