I have been on a 80/20 Raw Vegan Diet (like the Hallelujah Diet) for about a month now to try to aid my body in the healing process. I don’t feel wonderful yet, but I am certainly showing the signs of detox. This soup was so comforting when I was experiencing those awful symptoms. The green onions in it were the trick that gave it the flavor, and the coconut cream made it taste creamy. It was so good and so easy. I thought I was making plenty for the week, but I wolfed it all down in just a 24 hour time frame.
Here’s the easy recipe:
1 Tablespoon minced garlic
1 Tablespoon minced red (purple) onion
1/4 cup green onion
1 cup liquid portion of canned coconut cream
2 cups organic vegetable soup
1/2 bag of frozen cauliflower
1/2 bag of frozen peas, carrots, green beans mix
1 cups frozen spinach (optional)
In a large pot, heat garlic, red onion, and green onion on medium- high heat for 2 minutes, stirring constantly.
Do not shake the can of coconut milk- you only need the top layer of liquid. (Use the thicker portion for another recipe such as coconut whipped cream later.) Dump into pot. Stir.
Add the rest of the ingredients and bring to a boil.
Turn burner to simmer for 10-15 minutes.
