Sugar-free “Ugly” Chocolate Chip Cookies (Vegan option)

The uglier the cookie, the more delicious! Actually, I am not very good at making cookies pretty, so I kind of made that up.

Since I can’t have much sugar, I have found a way to make scrumptee-umptous cookies with very little sugar! So easy. I like to make only two for each person and then refrigerate the rest of the dough in a baggie. When I get the notion, I bake up a few more.


  • butter (or 1 cup of Smart Butter)
  • 1 1/2 Cup
    Coconut Sugar
  • 1 Teaspoon
    Vanilla Extract
  • eggs (or egg substitute)
  • 2 1/2 Cups
  • 1 Teaspoon
    baking soda
  • 1 Teaspoon
  • 1 package or 12 Ounce
    Chocolate Chips (or dairy-free chips)


  1. Preheat oven 375 degrees.

  2. Mix the softened butter (you can put the sticks in the microwave for a few seconds), sugar, and vanilla until it feels fluffier.

  3. Add eggs and mix well.

  4. Mix the flour, baking soda, and salt in and then fold in the chocolate chips.

  5. Lightly grease a cookie sheet and drop the dough on- make sure you have a few inches between each or you will have a mega cookie!

  6. Bake 10-15 minutes

  7. Let cool a few minutes otherwise they will crumble.
