Vegan Pasta Salad -low carb or gluten free

I love to take this salad on picnics or keep in the refrigerator for lunchboxes. It’s easy and so good!


Ingredients

  • Dreamfields spiral pasta (or gluten free pasta)
  • Artichoke hearts, drained
  • Kalamata olives, drained, pitted
  • organic grape tomatoes, halved
  • 1/2 Cup
    red (or purple) onion, diced
  • Italian dressing mix
  • 1/2 Cup
    Extra-virgin Olive Oil
  • 1/4 Cup
    Balsamic Vinegar
  • 8 Ounces
    Feta (or vegan cashew cheese)
  • 1 Pinch
    Black Pepper

Instructions

  1. Cook and drain pasta

  2. Mix the Italian Dressing Mix Packet with the olive oil and vinegar.

  3. Mix all ingredients together

  4. Chill for at least 2 hours
